The Search for the Perfect Organic Tea
 
After a meditation retreat in 2021 where Jeromine Chevalier had plenty of time to think, she felt a calling to do something for the world and its people. She had been searching for a good quality organic tea shop in Perth for years, without finding anything up to standard. Jeromine saw this as a sign – she had always loved making her own blends at home, now it was time to share her love of organic loose-leaf tea with the world!
 
What began as a hobby soon flourished into a successful business, as Jeromine branched out into selling her blends at farmers markets around Perth. This expanded into an online delivery service, with her teas being sent far and wide! Her mission is to “bring happiness to the world through cups of tea”!

Spilling the Tea on the Perfect Cup
 
Jeromine says there are three important things that contribute to the perfect cup of tea.
 
The first is water temperature. The temperature at which you infuse your tea directly affects the aroma and taste of the tea. If you boil the water for delicate teas, like green or white, you risk burning the leaves. That’s why Jeromine recommends using a lower water temperature for these types of tea. The quality of the water is also important – she recommends using clear, odourless, and uncontaminated water.
 
Tea quantities are also a consideration. How much tea you infuse will impact the taste of your tea. The longstanding rule of thumb is to use a teaspoon with 2 grams of tea for every 175ml cup of water. Tea connoisseurs will point out, however, that tea should be measured in weight rather than volume as it may change drastically from tea to tea.
 
Last, but certainly not least, is steeping time. Jeromine asserts that one of the most important considerations when making your cup of tea is how long you infuse it for. The longer you steep your tea, the stronger the taste. Steeping releases the tannins, flavours, and bitterness. Jeromine provides a general guideline with all of her blends, however she is quick to point out that it is important that you make your tea the way YOU like it, so play around and have fun finding your perfect combination!

Jeromine’s vision is to get everyone drinking high quality teas and herbal blends without using any harmful chemicals, for people or the planet. Therefore she is passionate about saying NO to teabags, and only selling loose-leaf teas. Switching from teabags to an infuser is a small way you can make a positive impact on the environment.
 
Jeromine also embraces sustainable practices within her business, which means she does not use any plastics in her blending and packing processes. Her tea pouches and cylinders are all recyclable and the mailing materials used are biodegradable.

Tackling Challenges One Cup at a Time
 
Jeromine says her biggest challenge faced in running a small business has been putting limits on the time she invests into it.   When it is your own business, you could just keep on going all day and all night because it never ends until you say so. There is about a million things to think of everyday and another million things to do. I make a TO DO list every morning but honestly barely get through 50% of it. So when it gets too much I sit back on my meditation pillow and try to let go of the stress”.
 
Her goal for the future is to open her own little tea shop in Perth.
